Cheesecake (Lacto-Vegetarian / SuperEasy)


I am not a great baker. Flour and sugar does not like me - and anything I make tends to come out a little weird :P But I love the act of baking or making sweets from scratch... So this was quite a wonderful experience since I did not need to use the oven for anything except for baking the crust! I recently made this healthy Cheesecake from an old book called "Yoga Mind & Body"... It was SO easy and it came out really tasty as well! You can also add or substitute ingredients for flavor variations of your choice :)


Ingredients:
1 1/4 cup (110g) crushed graham crackers
3/4 cup (75g) coarsely chopped walnuts
4 tablespoons melted butter
14oz cream cheese
1 cup (275ml)yogurt
3-4 tablespoons honey
1 teaspoon vanilla extract
fresh fruit for garnish

Mix together the crushed graham crackers, chopped walnuts, and butter, and press into a 9 inch springform pan. (i didn't have one - so i used a 9 inch round pan instead - and it came out fine - i just had to scoop it out with a cake cutter instead). Chill in the refrigerator until the mixture sets or, for a crispier texture, bake in the oven at 350 F for about 10 minutes, until it turns golden brown, and then set aside to cool.

Beat the cream cheese and the yogurt together until smooth. If possible, use an electric mixer so that the mixture becomes light and airy. Add the honey and vanilla extract. Pour over the crust and chill until firm. Just before serving the cheesecake, decorate the top with attractively sliced fresh fruit. (serves 6-8)


Variations: add cocoa powder to the cream cheese filling :)
