Hot Pepper Pasta


There's been a recent buzz about healthier eating brought up on by world renowned British Chef Jamie Oliver. He recently won a TED award for his efforts to help America change its eating habits (starting from teaching children how to cook healthy meals). Its great that someone of his caliber would actually take a stand and try to make a change...

So, along my quest to live a healthier lifestyle - i cam across this Hot Pepper Pasta Recipe on a Vegan Recipes community on livejournal... and it has been my favorite pasta recipe BY FAR.

Just the sound of it tasted great to me (pepper & pasta? come on!), so i gave it a try - and what a marvelous dish it is... What makes it all even sweeter is that its vegan! wow! Give it a try - and even if you're not vegan - i'm almost certain you will enjoy this dish - with or without the spiciness - and you can add grated cheese to it too if you want extra flavor (although that would not make it vegan anymore) just sayin'. ;)

HOT PEPPER PASTA
1 lb whole wheat pasta (i like spaghetti or linguini for this dish)
olive oil
about six handfuls of small sweet peppers, chopped into roughly equal pieces
a 7.5 oz jar of sundried tomatoes packed in oil
a can of quartered artichoke hearts packed in water
four cloves of garlic, pressed or chopped fine
3-4 small green hot peppers (any varietal, according to your taste/degree of heat tolerance), chopped into roughly equal pieces
juice of 1/2 lemon
hot pepper flakes

 


first, put your pasta water on medium heat. make sure to salt it very well. this brings out the hearty flavor of whole wheat pasta really nicely.

drain the artichokes and put them in a bowl to marinate in olive oil along with the garlic and lemon juice. add pepper flakes and salt to taste.

next, drain the tomato oil into a deepish frying pan and set the tomatoes aside. saute your peppers in the oil, with a good amount of salt, a few dashes of pepper flakes, and if you need it, extra oil.

when the peppers are getting close to where you want them, bring your pasta pot up to a boil and throw in the pasta. then add your tomatoes and the contents of your artichoke bowl to the pan of peppers. your veggies should now be covered with a bit too much oil for a saute.

cook your veggies until the pasta is done, and then mix pasta and veggies in a bowl to serve. put the cooking oil on the side in a little bowl so that people can spoon it over their pasta to taste - it becomes spicy and yummy.
